You can try Pasta with red Pesto :)
You buy some red pesto, some cream and cheese..
You cook your pastas then add pesto + cream + cheese.. In the oven for 2 mins and that's it :)
Delicious, cheap.. Perfect for a student :)

heres a carb rich meal...
diced potatoes
diced onions
diced Serrano (or pepper of choice)
eggs
meat (pref ground turkey)
> season meat, brown and set aside
> oil up wok
> fry up onions and pepper for a minute
> put in potatoes
> when potatoes are tender scramble in 3-5 eggs ( i prefer to stir mine in instead of scrambling beforehand)
> finally put in meat with the rest
if you want you could sprinkle parmassan cheese on top of the entire meal.
i guess it isnt that simple but it is a fav that my fam likes
you can skip the meat if youre cheap

what my roommates and i did for a long time until we couldn't eat it anymore was pasta with ranch and parmesan cheese and bacon bits

tinned salmon is pretty cheap.
I found baking it in the oven and then drizzling it with lemon juice and black pepper is nice.

Certain fruits are super cheap and take no time to prep. I know you said mostly dinner, but fruit is best eaten on an empty stomach, so better off for breakfast and maybe you can eat the breakfast food later in the day.
Bananas can be found from $0.50 - $1.00 a pound anywhere in the US(even organic is $1 or less a pound most places).
I looked at your profile and says you live in Florida. If you still live there you can find a lot of local high quality fruit for very cheap.
