Ok my only problem now is just knowing when meat is ready or not and when to flip it

I heard you should only flip it once and never back and forth

usually you can tell by how much one half has cooked..
if not you can always cut into the middle

I heard it is bad to cut the meat before it is ready.
supposed to cook, then let sit, then cut

but I don't know when it is cooked on one side

make sure you watch all the parts.
if you ever have a question about basic cooking again, refer to me or Alton Brown.

Grilling is pretty much the only way to cook meat imo! Unless it's really really cold outside I'll always grill (obv not for like stews/soups etc!).

For steak:

Put the grill on high and wait for it to get around like 500 degrees
Put the steak on the grill
4 Minutes each side
Let it rest for ~ 10 minutes before cutting it
Done.

+1 for grilling

If you like grilled chicken and spicy food try this:

Smoke
Have chicken defrosted
Take 3/4 cup of lemon juice and put in a bowl.
Dip each side into the lemon juice for about 5-6 seconds
Throw some black pepper, crushed red pepper, garlic powder, and oregano on top
Grill, add some cheese if you want. And some onions on top and let them grill for a bit (make sure you dont do this when your chicken is ready to be taken off, otherwise your chicken will be overcooked by the time the cheese/onions are good to go)
Smoke
Enjoy
