- 1 can campbell's tomato soup
- 1 can milk (the soup can)
- 1 teaspoon ground cumin
- 1/4 cup fresh diced tomatoes
- 1/8 cup shredded mixed mexican cheddar
- 1/3 cup crushed tortilla chips

- more shredded cheese
- sour cream

If I had any basil I would have placed 1-2 leaves right in the center of the bowl to garnish.

Turkey Burger- the healthy alternative to beef

-4oz ground turkey
-cayenne pepper
-onion powder
-garlic powder
-pepper jack cheese


Form the turkey into a patty shape
Season both sides of turkey with .5 tsp of each seasoning
Place in pan on stove
Cook to 155 degrees and place cheese on patty
Finish cooking until cheese is melted
????

Fish Tacos with Tomato & Eggplant Salad (all self-created recipes)

Do these things before you cook the fish

Cabbage slaw (for the tacos):

1/4 head white cabbage, sliced as this an possible
1 Tbsp cider vinegar
1 Tbsp olive oil
1 jalapeno, seeded and diced small
1/4 cup chopped cilantro
salt & pepper to taste

combine all the ingredients and let sit until fish is done.

Tomato & Eggplant Salad

1 large eggplant
2 large tomatoes, diced
1 cucumber, peeled and diced
1/2 medium red onion, diced small
1 red fresno or jalapeno pepper, seeded and diced
1 tsp ground cumin
1 tsp ground coriander
salt & pepper to taste

Pierce the eggplant all over then place under broiler, turning occasionally, until skin is burned black all over and flesh is soft. Remove to a paper bag; close bag and let eggplant steam until it is cool enough to handle. When cooled, peel skin off eggplant by hand. Cool eggplant then dice it small (the pieces will be more mushy than cubes--that's OK). Combine all ingredients and let sit until fish is done. Tip: to cool eggplant quickly, pop it into a zip-loc bag and place bag under running water.


Fish Tacos

~1# firm white fish (used rockfish this time; anything similar will do)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp garlic powder
1/4-1/2 tsp ground cayenne pepper
salt & pepper to taste
olive oil for sauteing

combine spices and coat fish
pan fry covered in about 2 Tbsps oil, about 4-5 minutes/side until fish is flaky

Serve with tortillas (corn or flour), chopped cilantro, and crumbled queso fresco.

Yes--here's the recipe I came up with based on Coyote Cafe in Santa Fe (which is very good).

Pineapple salsa

1 Pineapple, peeled, cored, and diced small
1/4 medium red onion, diced small
1 hot pepper of your choice seeded and diced small (I like a habanero here--wear gloves when cutting; use jalapenos if you don't want that much heat)
1/4 cup chopped cilantro

Tacos
~1# boneless pork loin chops
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp garlic powder
1/4-1/2 tsp ground cayenne pepper
salt & pepper to taste

Rub the pork with the spices then either pan fry or grill (best option with enough time; obviously over wood/charcoal B) ). About 5-7 minutes per side depending on how thick your pork chops are and how well done you like your pork.

Dice the pork when it's done; serve with the salsa, crumbled queso fresco, chopped cilantro, and corn tortillas.

I taught myself to cook because I like to eat. And--when you're grilling or BBQ'ing--it's a great excuse to drink more beer. :D
