Use fresh thyme or Rosemary parsley or chives. Garlic also fresh. Oregano is not my personal favorite. Try the red one for a change. You can get them in bunches or in little pots so they keep fresh and regrow.
Get good fresh vegetables. Usually the smaller the tastier.
Roast them a little before cooking. If you want you can caramellize( not sure that's a word) them with sugar or honey.
Use good fats such as good native olive oil. That makes a huge difference also.
If using butter make sure the temperature is low enough. Like native olive oil (grey smoke) they burn at hot temperatures.

You are also missing sour flavours like citrus or vinegar apart from salt ofc. Pepper is overrated imho. You can use chilies or cayenne pepper if you want things hot.

Salt and pepper usually works well. Also, try Cajun seasoning!

Ahh, but I must concur with you there; while that may perhaps be the reason for the bloat, it's also likely due to an inappropriate combination of foods. For example, beans and cheese do not digest well together and can cause indigestion unless one is gifted with a particularly strong digestive system.

As for seasonings exactly,
Parsley and rosemary are amoung some of my staples
