pat dry and then heavily season with sea salt or kosher salt and let sit for a half hour or so on counter, depending on thickness.
black pepper on the steak after I flip em.

I agree that a good steak doesn't NEED seasoning, but I love mine well salted.

Lil bit of butter in the pan, salt and pepper, and a couple mins before it's done throw in some diced garlic so it doesn't burn. After it's done throw in some onions to caramelize in the juices and put them on top. Eat. :drool:

Depends on the steak and my mood.

With a really good steak, typically heavy kosher salt and cracked pepper, olive oil. Medium rare, finish with a tablespoon of butter.

If i'm feeling wild, original #7 jack Daniels bbq sauce and for spices I use thyme, rosemary, salt, pepper, red pepper, and i'll grill some red peppers and onions in the same pan to get the same flavor.

If I'm pan frying the steak I like to cook some eggs in em afterwards.
Steak grease makes for the best eggs.
