most people usually dont, myself included, but you CAN eat the skins on sweet potatoes too. ive had/made roasted sweet potatoes with the skin on and its good. adds an earthy flavor to the sweetness of the potato itself.

Good choice, at least some of the nutrients from the skin may have absorbed into the rest of the potatoes during the boiling process.

micronutrients (vitamins/minerals) in the skin, but there are definitely a bunch of macronutrients (carbohydrate) in the flesh

which fade away anyway if you cook/bake them

its a matter of taste, i like skin on, too
