Not table dhote, this is a la carte dish i added maybe 1 month ago...
Veal sweebread and lobster, sichuan peppercorn sauce, kale and shimeji, sriracha roasted cashews, parsnip purée.

And yea, cooked in a pan. Better then a plancha because u can baste them with butter as they cook...


hmm butter.. yes that is most defiantly true.

how much is that dish if you dont mind me asking.
And we use the same scallops, those are great

Lobster dish is 38$. But around here u have to add 15% tax and 15% service...
Scallop was on table dhote at 38$ including one starter.

And yeah the scallops are U-10 fresh (dry) wild caught from the states..

yeah probably virginia. think our scallop dish is around 18 $ comes with 3 scallops on a bed of parm risotto, topped with evoo and micro greens.

My fish table hote tonight... grilled blue marlin ( marinated with soy sauce, cilantro, ginger garlic, citrus, sambal) with fresh tomato, lime and cilantro salsa, sweet potato puree, and roasted vegetables.

Yeah around here fresh scallops cost 50$/kilo so no way we can sell them for this price lol .. unless u want 50% food cost :P

This looks so nice! I often see green pea purees that have almost a dark/off green color to them, so it's nice to see this puree done right!
I actually did a dish similar to this a few months back at the restaurant I work at. The only thing different really is that we did ours with seared scallops.

Your plates look so solid.

what restaurant is this? I was in Quebec a while back and i'm thinking of visiting again perhaps, so i dont want to miss it :)
