First time posting on this part of jsp, so here goes nothing:

Recipe #1:

Ingredients: small crackers, canned tunna (perferably in water), mayo, pickled cucumbers and green and/or black olives (with no pip)

- Mix the tuna and the mayo to a consistency you'd like (less mayo = more chunky)
- Smear some on the crackers
- Top each with a thin slice of pickle or olive

Recipe #2:

Ingredients: chicken brests, flour, eggs, bread crums, salt and pepper

- Mince the meat (or buy it minced if possible)
- Apply kitchen wrap (or whatever that transparent adherent flim is called) to the bottom of a plastic container that has a rectangular shape
- Scoop some of the meat (depending on how big the container is) and put it in the container by pressing it and make it about half centimeter thick
- Wrap it in the film completely and freeze it
- While still frozen, cut into small regtangles
- Pass each piece in the flour, then the egg (beaten), then the bread crums (seasoned) and place on a tray
- Bake on the oven (or deep fry if you prefer) until the outside is krispy and the inside cooked (open one for testing)
(this goes great with a sauce made of ketchup, mayo and a touch of mustard)

Recipe #3 (vegetarian):

Ingredients: pre-cooked chickpeas, carrots and/or cucumbers (without the seeds), olive oil, salt and pepper

- Re-cook the chickpeas for extra softness
- Shred the chickpeas in some kind of blender and season it with olive oil, salt and pepper
- Keep blending until you get an homogeneous paste (add olive oil if needed)
- Cut the carrots and/or the cucumbers in small dices
- Incorporate the vegies in the paste
- Take out chunks of paste and mold it in your hands to whatever form and size you like (I prefer small flat rectangles)
- Pan fry them in a little bit of olive oil

Have fun.
