I keep cooking them in a pan with less than a tsp of oil to be healthy, and it just turns my pan black and they taste like shit.

i sautee with olive oil and i use plenty of it. lots of people will freak out and scream olive oil goes rancid when heated!!!, but just ignore them. i've been using olive oil my entire life and it tastes just fine as long as you don't get it smoking. since you need a medium-high heat for most stir-fry/sautee, i'd recommend adding the oil then immediately adding the vegetables within a few seconds to help keep the oil from over heating. stir constantly to keep things from burning. if u really want to cut back on calories that badly, add a couple tbs of water to the pan or just microwave or steam the vegetables with water. otherwise, i say pile on the olive oil. and look up some stir-fry recipes for more ideas. green beans, asparagus, peas, carrots, and potatoes are all good too in veggie stir-fry. i wouldn't recommend cutting out oils unless you are already eating too much fat. for fat-free, i think microwaving is better than steaming for sake of ease. put the veggies in a covered bowl with a few table spoons of water. microwave for a couple minutes and check/stir/add time as needed.

try using peanut, canola, or vegetable oil. they have a higher burn temp.
i usually use canola oil, some garlic, and veggies. cook until the green veggies get that bright green color, maybe an extra min after that.
you have never actually used olive oil, have you? garlic quickly burns in sub-smoking olive oil temperatures so you wouldn't ever be getting olive oil that hot in the first place. if olive oil smokes for you, then you're doing it wrong.
