Duck déclinaison i came up with on the fly....
First part is a duck tartar, seasonned like a classic beef tartare
Then pulled duck confit with brussel sprout and smoked diced breast
Last part is roasted breast, shitake and enoki mushrooms, porto sauce, butternut squash purée.
