Look for quinoa flour. It can be used pretty much like normal flour but without the gluten. Or so I'm told.
A good friend of mine his brother and mother both have celiac disease. I know he's used this site and made a few things even I thought tasted good.

Rice flour is a great alternative to wheat flour.. it works just the same and you never noticed a difference in taste :D
