i am a fan of chicken thighs. i know dark meat but much more tender and i dont think it is really as bad for you as people think.
plus its cheaper

get some carribean rub or jamacian rub on there before you grill.
its really all about seasoning when your trying to watch calories. adding sauces can effect calories and sodium esp.

Jamaican Jerk rub is the best for grillin chicken.
Marinate in sriracha overnight then sprinkle on liberal amounts of jerk seasoning while grilling (both sides)

you take the chicken and shove a duck inside it, then shove inside a turkey, inside a pig, inside a large hog, inside a cow, wrap it in bacon then call an ambulance for the heart attack you are about to have.

Blackened chicken.  I got this from the food network awhile ago.    It's really good. I'm also a fan of teriyaki chicken. (Just buy Kens sauce or whatever in the store)

1/2 teaspoon paprika

1/8 teaspoon salt

1/4 teaspoon cayenne pepper

1/4 teaspoon ground cumin

1/4 teaspoon dried thyme

1/8 teaspoon ground white pepper

1/8 teaspoon onion powder

Rub on chicken; grilll.

I will have to give this a try... How long you let marinade?

We usually just get seasoning packages from store and marinade all day at work. Current fav is a carribean jerk seasoning.

I love making Chicken Strips..simple and awesome.

Panko breading or Italian Bread crumbs
Long thin sliced chicken breast
Egg
Flour

I add garlic salt, oregano and pepper to my Flour - then dredge the chicken in it+egg and fry or bake depending on preference. Served with mashed potatoes typically for me.

This. I like it with some BBQ sauce on the side. Yep, I'm one of those.
