i use motzeralla, parmesano, extra sharp cheddar (small amount) and feta. heavy on the feta. for veggies i go green pepper, onion, chopped garlic, but i like a very simple yet spicy pizza melt. i dont like the mushie veggies like olives or mushrooms. be sure u pre saute the onion till it starts to carmilize (i do this after the sausage, in the suasage oils.
