Have any of you ever eaten at Masaharu Morimoto's restaurants?

The best food I ever had was here. The Toro Tartare is to die for.

Of what I have seen so far, I find to be him focused, effective and uncompromising. Idk if it is because he works with knives, but to me his razor-like focus is highly goal-oriented. On one of his British series episode, he illustrates to a chef that it is not the number of ingredients nor the complexity of a dish that may win a Michelin Star, but the quality of a simple dish - one well done. He doesn't always "win", but he reaches the end point of what he's doing with drastic improvements along the way; He gives a chance for people to improve their career. That makes him so effective in transforming not only some dishes to what appears to be succulent delights, but often to change people's lives as well. Perhaps the Kitchen Nightmare episode about the conversion of a Fine Italian Dinning [sic] to a Pizzeria illustrates his effectiveness. Apparently people atm find the food to be average there last time I checked. So very contrasting with the legacy existing there. I can't possibly remove from my mind the Monte-Cristo sandwich. I ate one such sandwich a few years ago :bonk: Before the first bite I swore I would never eat that again. Needless to say I was seriously amused when he ordered that on his show  Perhaps the most striking to me is Hell's Kitchen - not so much the minion's pummeling, nor the so-called grand prized of a restaurant at the finale. It is his uncompromising attention to details; his insistence on predictability; his clear illustration that rewards on little victories are costly - it's the dinner service that matters, not the mid-day pampering.

Being the Best Chef in the world being irrelevant? Definitely irrelevant. To me, he's dedicated not only to quality, but often to illustrating to people what's not working and to changing some people's lives in the dining business.

I still can't remove from my mind his saying "...<blah>...you donkey." Fortunately he hasn't dealt with me just yet - he may run out of steam and words rather rapidly.

I wouldn't think Mr. Ramsey is much into culinary art.

imho his point is that fine dining should have standards of quality ingredients, enjoyable presentation, excellent food taste and precise reproducibility. If a restaurant chef discards a rancid scallop because he saw a Kitchen Nightmare episode, then the customers win. That is you and I you know.
