It adds moisture. Why would you use a beer can if it was empty anyway? Also, mix in a dry rub into the beer, the same that you put on the chicken. It adds the flavor to the outside (from rubbing it on) and the inside.
You can fill the can with something other than beer. Apple Juice is a good alternative.
