I'm a previous florist/edible arrangement maker and here's some tips.
Cut fruit in water to prevent the browning process. Rinse well and keep refrigerated as long as you are able. Fresh parsley or mint goes a long way not only to add diversity but color and appeal.
I always preferred cutting with plastic knives over metal- it browned fruit somewhat less over time.
