one of the easiest things I do with pork chops or loin is to rub mustard powder onto them (I use keens or colemans) then sprinkle brown sugar over them - bake till done. Only problem with this is if you over cook it's a pita to get the sugar off the pan

you lost me here, boil water for instant boxed potatoes or boil fresh cubed potatoes in water = same heat involved.. so take 3 potatoes peel and cut em up, boil them for 20 minutes drain add milk and butter and mash them= 10000000000 times better hen in the box season to your liking
