^^imitation crab?
dont blame me if u get sick but this is what i'd do:
Drive around till you see a korea town or china town i live near the LA area so it wasnt hard.
I found a fish market, pointed at some tuna chilling on ice said "give me that"
i took it home, put it in a bowl of ice water for 10min to quickly defrost it.
rolled it up in sushi rolls and thank god the next day for not getting sick. -cheers

If you have ever had a Californian roll, it is standard nO matter what thy the crab meat is fake.

Family made suhi for a couple years professionally.

Unless stated other wise it is fake don't believe me, ask any sushi chef

I don't know where you eat sushi, but the places I go to all use real crab. Whole Foods--at least around here--evens uses real crab. If I opened a menu that said fake crab, I'd be out the door.

the traditional japanese place w/ actual japanese owners i worked at used real crab, alaskan and snow. korean owner? imitation fo shau. i could never eat sushi at an asian buffet, unless the meal is at least $30, at some solid seafood buffet. $15 buffets i've been to that had sushi were made w/ fish that looked so old. and sushi rice is very compact so it fills u up a lot.
one thing all of u forgot in ur cali roll recipes is mayo.
i dont think i'd ever make sushi at home. the time and toil required, the skills and tools u need, the variety and price of ingredients.. all makes it much simpler to eat out.

One thing you should try is spicy tuna since it's the next step in your quest to become cultured. Buy sushi grade Ahi mince it with some cock sauce. Then wrap it with rice and seaweed and you have a spicy tuna roll. You can add thinly sliced cucumber for texture and flavor.

Personally, my favorite roll is the following:
Spicy tuna roll topped with slices of albacore with cock sauce and spicy mayo. Add a little bit of masago (the little orange fish eggs) and you're done.
Here is what it SHOULD look like:


One day you will be at my level where you can eat salted cuddle-fish with no rice.
