I've had thai cooking courses in Chang Mai, Thailand, by a BBC thai chef. We made our own curry paste, own curries etc...
And ok here are my comments...

Fucking terrible recipe. Theres not 10 ways to make curry....
Step 1 = Sweat your aromatics veggies in oil. (onion/garlic/ginger...)
Step 2 = Add a good quality curry paste or powder, sweat for another 30 sec-1 min. (go to your local asian store, buy good quality curry paste, curry powder...) That 3 spice blend you got doesnt cut it.
The amount of spices/paste and kind will depends on what kind of curry youre making
Step 3 = Add a good broth, or coconut milk, or both (again depending on the curry type)
Step 4 = Let reduce until you have the constenticy you want... add more broth to thin it out if needed.

Now garnishes are up to you, chicken pork anything, if you had chicken you can sear it with the spices... but just make sure you dont overcook your veggies or meat.

dont mixed things. There is indian curry and thai curry which is totaly different ;)
I also learn thai cooking in Bangkok. Ive been in Thailand about 10 times already..

Thai curries is the best imo ;)
Green and red, I prefer the green with chicken (gai)
