Yep, it's that time again. I need to add a new knife to my arsenal. But this time I'm torn between a few knives. I've narrowed my options down to 3 different knife makers. I'm currently looking at purchasing either an Aura, Florentine, or a Misono UX10. I feel like Misono makes some of, if not the best knives for the price. However, I love the steel Aura uses as well as their craftsmanship, and I love the craftsmanship and uniqueness from Florentine, yet I'm not as fond of their steel as I am Aura and Misono. What are your opinions? What do you use personally or what would knives would you purchase (doesn't have to be one of these) if you could? And no, I will not even consider Shuns...

Misono uses a non-cladded Sweedish stainless steel.
Aura uses a high carbon steel (which I'm fond of), and gemstone counterweights in the handles which I find interesting. The handle is made of Oregon Big Lead Maple & Malachite.
Florentine uses 14c28n Sandvik stainless steel and are hardened to 59-60HRC. They too have counterweights in their handles, but theirs are made of Brass discs. The neat thing about them is that each knife is custom made, and not 1 knife is like the other. The appearance of the handle varies by the mood of the maker on that particular day.

lol just by the looks id totally go with the first one... other one looks like some home cook hipsters knives, not real professional knives... just my 2 cents..
One of the michelin star restaurant ive worked they were using misono... they are nice, just not my style...
For handles i'm getting to like your standard oval straight wood japanese style... simple and efficient... im liking less and less western style handles...
Ah before i leave japan i will go to Masamoto tsukiji and spend a couple hundreds... ;P

I LOVE the D-shaped Japanese handles. One of my Tojiros has a D-shaped handle. I'm definitely leaning towards the Misono, probably the 270mm. I've actually looked a bit into Masamoto as well, just not that much.
Aura really does make a great product. A chef friend of mine recently got one for his birthday and I got to play around with it for a bit, and the feel of it is awesome. If I could get a Misono without the western handle, that would be ideal haha.

I like tojiros they are great for the price.

Out of those three I'd say go for the misono if you want to use it at work and for practical things, get the florentine (if you even can) if you want a cool custom knife.
