There's going to be a potluck in a few weeks at work. Thought I'd make a batch of nachos with loads of cheese and toppings. Maybe a batch of guacamole or pesto. Any other ideas for party foods? Perhaps vegetarian friendly options?

Personally for a potluck i wouldn't make nachos like that, they'll go soggy pretty quickly. If you want to still do nachos, then I'd recommend you do a layered dip for nachos, they can even be vegetarian. I like to do 4 layers. Bottom I mix cream cheese, sour cream and chili powder together. Then i do a layer of refried beans, and then a layer of salsa, followed by a layer of shredded cheese. Bake it in the oven for like 15 minutes till the cheese is melted and it's hot and you're good to go. Great for parties/potlucks and it tastes great. You can use light cream cheese/sour cream to reduce the calories and it won't impact the overall flavor that much.

Personally, I wouldnta want to do nachos because when the cheese isnt fresh, and when it gets cold, and then it gets soggy, no bueno.

Somethiing, I like to do for potlucks is do a pasta salad,
easy to make, its nice cold/room temperature.
can be made vegitarian or with chicken/beef
and relativially inexpensive, and lets face it, who doesnt like pasta?

pigs in a blanket.

buy crossiant rolls. and a pack of hot dogs.
cut dog into 1/3rds and wrap in crossaint.

bake and enjoy.

make some custom sauces for a bad ass time.

another thing you can either buy of make is a veggie tray with baby carrots, celery, cherry tomatoes with ranch dressing! :)

cheese and crackers! smoked salmon on crackers is good too! :D
