Hiya,
I have never seen this forum in the 6 years on jsp is this new?

I'm starting Culinary school at Niagara falls Culinary Institute to finish up a long time goal of becoming a chef
and think I just found me a new play ground..... lol

Currently in a sous chef at a small restaurant here in Niagara Falls and I have been allowed to create my own
Daily specials hope I can share some adventures with y'all and maybe learn a thing or two

Would your chef skills include salsa making??
Big fan of salsa here with 8 dif kind of chili plants in the garden

dry out a ghost pepper. grind it, mix it with your weed and smoke it.

top pick as in best pepper or??
and tbh salsa is so nice cause u can really add anything just a matter of your taste only

recipes and peppers.

Personally I make my own wing sauce being from the Buffalo area its kind of
the thing around here "Buffalo wings" of course.

hmm pepper would have to be habinero i like the taste/ heat
for a recipe i normally do it all by eye
with a ratio kinda like this
for every 10 mildest pepper i put it i put 5 just a little hotter of my liking of flavor then 1 or 2 of the hottest pepper i can get my hands on.
so it be like

2 habinero
5 serano
10 jalipino
onion about half the amount of peppers that are diced then tomato cilantro
splash of olive oil/red viniger pitch of salt refrigerate till cold

But iv used things in salsa like
lemon or lime juice / mango/ pineapples/ green yellow and purple onion/ bell peppers/ anaheim peppers/ garlic
Its all about mixing the stuff that you like personally i like my salsa almost 50% peppers


Edit: i got a yellow ghost chilie plant thinking of trying to make wing/hot sauce going to be my 1st attempt at making a sauce ahaha
