this is what i did today

1kg of minced meat (i had 60/40 pork, beef)
1 onion
salt
pepper
2 eggs
some flour
blue cheese
frozen veggies( i used peas-corn-pepper, about 100g)

chop the onion small, mix it with your meat.
add the spices, and 1 egg
mix it
add another egg
mix it
add flour (i used about 1/3 dl)

add a bit of water

mix it good

take a little over half of the stuff,
spread it in a n oiled oven proof pan
add the veggies and the blue cheese
then take the rest of the stuff and cover the veggies and the cheese with it.
make sure that the cheese and veggies are covered.

bake it for 30 mins on 200 degrees(Celsius)
drop the temp to 150, wait 30 mins.

serve with mashed potatoes and gravy

Try adding Ritz Crackers in with the mix

ground cheetos would also probably be good. i used something similar last week for meatballs (stuffed with carmelized onion puree), and they came out awesome.

Meat loaf is one of my favorite foods.
