we had a special function today at work, so i made some extra stuff for that. made about 20 lb of mediterranean salad - green pepper, tomato, red onion, black olives and heart of palm in a basil vinaigrette. also decorated a bowl of egg salad with a swan nesting on eggs:



swan is an apple, eggs are parsnip and the nest is lettuce.



made quesadillas for dinner at home. came out awesome. started with a sun-dried tomato tortilla (what i had on hand), then freshly grated mozzarella and cheddar, followed by pico de gallo made with home-grown tomatoes and purple jalapenos. folded over, then topped with guacamole. yum.

thanks. im a chef by trade, currently. been working as one on and off for 11+ years. learned everything on the job, watching others.
