Step 1: Preparing the sauceIngredients:
2 Tablespoons olive oil
1 can crushed tomatoes (35 oz / 992 g) with basil in it
1 Tablespoon crushed garlic
Reduce down on slow heat. Stir frequently.It's ready when the reduced sauce is thick enough to hold back when scooped:
Use half the sauce for each of two pizzas. The sauce may be frozen if not used immediately.Step 2: Preparing the doughI use my bread making where I throw in the following:
3/4 cup water
3 teaspoons salt
1 tablespoon olive oil
2 cups bread flour
1 1/2 teaspoon yeast - bread machine yeast, i.e. the one with vitamin C in it (ascorbic acid)
Select Dough Cycle; press Start. Here's how it looks like when ready:
Step 3: Shape it upUse non-stick spray on the pizza tray. Then sprinkle a a little flour just to cover the non-stick spray.
Then shape the dough. Yep. That is not easy to do. The best way is to stretch it
really slowly, and uniformly, by pinching the dough until it forms a pie shape. Then press it down on the tray. Let it stand for 15 minutes.
Step 4: Cover it upFirst spread the sauce. Then sprinkle cheese. Yep, the cheese doesn't end up on top. Then the toppings. Beware of some vegetable to produce a lot of water! For instance, do not use too many mushrooms; and they should be sliced real thin.

Step 5: Bake itPreheat the over at 500F. Yes, that high temperature.. A convection over works great for this, but it doesn't have to be. Bake it until golden.
