I chopped up some potatoes and added some ground beef and a bell pepper with some sauce and a couple spices and wrapped it up in aluminum foil. I put it in the oven for about an hour on 400. When I took it out the potatoes had the consistency and texture of an apple. I put them in a frying pan for like five minutes and then they were cooked properly. Does anyone know why?

I believe this happens when the potatoes aren't dried after they are chopped.
So what I do is:
Skin/peel -> wash -> dry -> cut

Can dry after cutting too or both, whichever works.

Also u want to cooks meat and potatoes seperate. Don't want cross contam

ya this is for storage not for cooking... it doesn't matter if u cook meat and potatoes together
