What is the ideal builds/skills to run TZ P8? which merc and bind demon also

Conviction bind demon
Insight merc

Echoing beats both easily. Bind heph or black lancer demon

But if you want to go apocalypse or abyss, it just depends on your playstyle. Apocalypse/ring of fire for a more relax play style/massive aoe. Go void if you like clicking a lot/lots of action. Bind a defiler demon for better AOE

Hex: Bane + Cleave build is superior and very fun to play. 1 hit kills mostly everything besides bosses.

we talking ptr and ladder reset or right now?

apocalypse is better for tz p8. abyss is only faster on p1 elite stomping.
