What a decent amount of AR for vs melee setup?
I'm hoping I can ditch 1 Angelic's ring when I finish my inventory

Currently a pathetic 3.8k AR with very little inventory investment and 2x Angelic's

I would suggest against it and go fury if you really wanna make a shifter but! In the case your dead nuts set on making Mauler, I would say 5k+. If you want exact math and are too lazy to do it yourself (like I am) you can pm inkanddagger for all the fair duels math you could ever dream of.

Also, your average half decent conc Barb can have around 19k def

Yea, I'm trying to keep a balance of def/ar for vs conc barbs. both are at 3.8k right now with temp items and no prebuffing
I'll figure out if I really want to give up maul after I finish my inventory, I do like fury either way

Also keep in mind that while ladder may have melee lld. It's not popular on nl so tvt setups are for more beneficial. So frw is a huge part of "making it work". If you go fury, completely ignore def as it doesn't help you at all. (Tbh it barely helps anything but conc Barb)
