As topic says I'm going to be building a new pulling motor and I put either in just want to know what's better for torque and power

Solid flat on a roller cam with about 800 lift.

Single cylinder kohler k341. It's going on my pulling tractor for next season.
Plan on putting the biggest stroker kit I can get with the biggest valves,pistons, and cam. I'll post pics once I start and ofc video if interested in it
But now I can't put rollers in it. I was going to build a kohler command which was a 20hp twin ohv that they sell the rollers for but decided to start with single cylinder this year and next maybe the twin
