get a friend to hold it or tape it to a headrest or squeeze it between the seat and the headrest or something, if you dont have nothing to mount it to there is no miracle way just rig it up

Really? You're asking that question when you already know the answer. Gopro, drift, etc.. Get any of those cameras with mounts

mount it...
Or hold whatever you are recording with tight against a part of the car so it is essentially mounted (but really just held in place)

Use one of those universal suction cup phone holders, and zip tie your camera to it.

For real though, GoPros are popular for a reason. Just go buy one.
