It's not so much the 6.0 as it is the 3/4 ton trucks they come in. Heavier truck, more reciprocating mass, 4wd, more aggressive gearing, higher drivetrain loss, etc. In identically equipped 1/2 ton trucks a 6.0 will get about 2 mpg less than a 5.3. The new gen V 6.2 is very strong. Mileage takes a good hit but fuck it makes 420hp. Some guys are well into the 13's with RCSB 2wd 6.2L trucks sporting basic bolt on mods.

The towing capacity on my 5.3L crew cab standard bed 4wd 2014 1/2 ton is 9,100lbs. Honestly if you are pulling over 10k you should be using a gooseneck or 5th wheel and anyone doing that should get a 3/4 ton or 1 ton. 1/2 ton trucks are the perfect compromise for most people. Huge pull behind campers and heavy equipment hauling aside, they will do anything you want/need. The new ones are significantly better at everything than the gmt800 which is now 10 to 18 years old. Case in point my 5.3 makes significantly more power than your 6.0 and I still get 18+mpg unloaded with 4wd. Progress is good man.
