1000cc is a good starter. that way when you get experience riding, you have experience on somthing bigger and you wont have to upgrade down the road cuz yur 1k cc will have plenty of power.
the size of the motor dont matter for a starter bike, you could ride a 150cc dirt bike into traffic and get killed if your stupid with it and drive it past yur capabilities/the bikes capabilities.
my first bike when i was 16 was a 2000 yamaha R1. was well worth it.
if you start on some 600cc small pisser and poor excuse of a crotch rocket, when you upgrade to something with more power, you will have learn how to ride a bike all over again cuz a 600cc feels like a bmx pedal bike in comparison. The handling is completely different due to the size and weight difference
You dont ride.
You are MORE confident in corners because of the weight difference on a 600. The liter bikes feel like they are going to roll in corners, which is why people typically slow down a lot more.
Ask anyone who does any type of hard riding (canyon, backroad, track racing) and you'll hear it is all about the 600cc bikes (as well as the GSSXR 750 / Triump 675).
The only thing the liter bikes have over a 600 is the power. It might be similar to learning to ride again, but that is only because you are getting used to handling the POWER.
And sorry to tell you, but I can assure you my 600 will take any 1000 on a tight track / road.
