Sway bars aren't really cut and dry.  Depending on construction a 31mm hollow bar can be stiffer than a 31mm solid. My advice is to avoid reinventing the wheel. Let other people do the research and buy what works.

Aren't sway bars essential for turning? Even if it is for offroad use..

No. It ties the corners of the car together to keep it from twisting and rolling.  If you want weight transfer or maximum suspension articulation they are a hindrance.
