I don't have experience riding, but i have been looking mostly at gsx-r 600 and 750s, i also like the yamaha r1s and zx6rs.

I'm basically looking for opinions of what i should get and why.

I'm buying used and looking to spend at most 5000 dollars

Try to go 2004+

The fuel injected bikes are much more reliable and smoother to ride. Pre 2004 most were still carb.

A 600 is a good starting point but it should still be respected. 120hp on a sub 400lb bike is no joke.

Every body type fits a certain model best.

"I don't have experience riding but want my first purchased bike to be super fast and difficult for beginners......"

He is no different than most every 600 rider that has no dirt experience. Buying anything smaller is a waste. If he buys a 1000, yeah... dumb.
