you can add 1000 speakers on a 1 channel amp. the number of channels does not dictate the number of speakers.

a 2 channel will be fine assuming its 250-300rms watts@4ohms per channel or if its 250-300rms watts bridged.

keep in mind if you have to use a bridged 2 channel@4ohms then you will never be able to add anything else to it.
