how do you change the item on your pokemon so you can give to a different one?

They usually have the trainers beaten before they start EV training a Pokemon. Not sure if FireRed implemented the berry's that reduce EV's in certain stats or not, but usually that's how you'd do it. Reduce all the EV's that you don't want.

I'm curious. How do you use skills on the Pokemon? No one on the game seems to be helpful or even try to answer that.
I have Teleport on Abra and Sweet Scent on Oddish. Soon I'll have Cut as well. How do you use the skills out of battle?

give a rare candy and it'll take the item out without losing the candy nor the item

this works with key items as well

ill help you even though you should just use google for most questions

Cut: Walk up to the tree and press Z(A) , you must have a pokemon with cut in your party
Surf: Walk up to water press Z (A), must have a pokemon with surf in the party
Fly: Open your town map and select where you want to fly to and press Z (A) must have pokemon with fly in your party.

Edit: if you do not have town map type /unstuck and you can go back and get the map
