The hardware is all the same, yes, but the way it's used is different.
People often undervalue the OS. A good example of my point is this one: If I make my own OS, even with the same hardware, there's no way it would run as well as an OS developed by an entire team of professional OS developers.
The actual performance you get from OSX, the actual OS itself, is why it's so good.
There are tons of benchmarks online, and comparisons of the OSes with different hardware.
The biggest issue I have with Apple is their pricing. You have to pay a premium because they don't OEM.
But, what you pay extra for is quality. Their software (for the most part) is quality, their drivers are quality, the entire package is quality; in a MBP, for example, each piece of hardware is fine-tuned to be as efficient/synergetic as it can with the other specific pieces of hardware.
It's just a different ideology:
In Macland, everything is specific, for maximum performance (but little optimization). In Windowsland (and I guess if you count shitty 3rd party drivers, linux as well), nothing is specific; so, while you lose efficiency, you gain customization of your build.
A lot of people disagree with this, but it is honestly how computers should be. (For maximum efficiency)
