My favorite is 1/2 cup quinoa, 1/2 cup red lentils, and 1/2 cup chopped ToFu with some curry seasoning and add a little cayenne all in a rice cooker. Super easy to throw together with 2 cups of water.
After cooked I mix a serving with an avocado and some chopped berries. Pick your favorite, right now strawberries are in season.
