From a Biblical standpoint, Genesis would pretty much argue that hunting is just fine. However, since a lot of people don't take Genesis literally due to the numerous glaring inaccuracies, I'm not sure whether or not this could be used as justification for hunting.
Most inaccuracies seem to arise from trying to make it something it is not. For example, oral personal perspective History is not a Science textbook and neither "label" shows intent.

At that time, it is reasonable they could live on that diet but....
,as of now(man's current condition), I can't say explicitly fruit and nuts is the optimal thing to eat in our current condition(just by the text) but our current understanding has a lot of benefits associated with eating them.
