I'd like someone to explain to me why these topics could be considered 'encouraging'.

So Jesus has always been the same, huh? Well, hot fucking damn!

These topics are encouraging because they expose people to Gods truth . There is no down side especially since no one is forced to read them or post replies .

It seems like these threads are an exercise in futility.
The believer has already been exposed to 'Gods Truth' and has embraced it.
The non-believer has probably also been exposed to 'Gods Truth' and has chosen to reject it.
So where is the merit? How does, in this instance, stating that Jesus is a static entity encourage you?
I really don't understand.

Non-believers become believers and discussing Scripture can be an important part of the process .

When it is written that God is unchanging all you hear is static but a better way to look at it would be that Gods love for you will never waver , never change , and that His promise of salvation is always there for those who choose it . Always !

I highly doubt that a non-believer could be swayed by daily, but random bibly quotes.

It's a start but these Scriptures are even more important to the believer who is not in the habit of regular reading of the Bible . To be reminded that there is nothing that any man can do to me that really matters is very empowering .

Did you even bother to read the citation ?
