If my quarterstaf has dexterity and I use an item to give me enough dex to use quarter then remove the item it stays equip but if I remove it I can’t equip it again without the dex item

You're fine if you die only if you unequip it.

What if there’s no space in inventory though where will quarter go?

When you die your gear stays equipped.
