Nature does not create categories. Categories are something our mind imposes on the world to make sense of it. It's easier to just sort people into two boxes than to always remember a continuous spectrum of all features among all physical things.

Sex is a descriptor encompassing a broad range of physical traits that generally correspond to what you think of when you say "male" and "female".

Gender is the expectations we have traditionally placed on people of a certain sex.
