man's choice (free will) to commit sin is not Gods plan, in fact he wishes that no man shall perish and be cast into the lake of fire.
God can't interfere with anyone's choice/decision to sin or it breaks his own law of granting said free will.

There's nothing to look up though. Even if we knew the exact mechanism that's the underlying cause of X, Y, or Z auto-immune disease, we wouldn't be able to answer why auto-immune diseases exist at all to begin with.

In the bible god softens or hardens hearts as he pleases. Pharoah was going to let the Israelites go but god hardened his heart so he could finish his plagues.

But God knows that granting free will would result in some people choosing to sin.

Just like being a parent. We let our kids grow up and make their own choices knowing that they will make some bad choices. This isn't because we want them to make bad choices, but it is still included in the plan.
