Whether self defence is appropriate is determined by the criteria of 'reasonable force'. Is it reasonable to break someone's jaw for throwing a milkshake on you? No, it isn't, but it's not that simple either. I've seen a case where the defendant was startled by a youtuber pushing him for a prank and instinctively he punched him, knocking him out cold. Judging by the information he had in that split second the defendant genuinely thought he was in danger and he was not charged.
To answer your question simply, no you would not get convicted if it was a reactionary punch. If you continued to pummel them on the floor then yeah.
