Dunno about the States but I get along pretty cheap, meat's expensive y'know.
Buying lentils/legumes in bulk helps a tonne and using whichever veggies are currently in season lowers the cost quite a bit. Curries, dhals and soups are cheap as fudge after the initial investment in some spices (they last a long time).
Usually I cook for a shitload of food at once and eat it as long as it lasts.
Last week I made borscht. 1e/kilo for cabbage, half a euro for half a kilo of potatoes, one euro for 1kg of beetroots and a euro for some 800g kidney beans. The onions and the garlic were xx cents. Added in some bay leaves, salt and black pepper.
Ate it with rye bread which was like 30 cents per package. If you can be arsed to do it baking your own bread makes things even cheaper.
that makes for something along the lines of five to six euros for the week's dinners.

Yh this, doubly so if you drink shitloads.
Might also want to consider something for the iron as it's not as readily bioavailable from a vegetarian/vegan diet.
