My research adviser is a vegan. She's constantly sick. I know you can do vegan healthily, but she's a great cautionary tale against doing it the wrong way.

Besides the discipline in trying to get all the nutrients in a vegan diet... how expensive is it? I don't know the budget on this stuff.

It's not any more expensive than regular eating if you plan it out.

As far as nutrients go eat variety and eat enough. Vegans look like skeletor because they don't eat enough and over train

It all depends on what you like. I go through phases during the year (never vegan but vegetarian) where I crock pot large amounts of

sweet potatoes
bell peppers
red peppers
carrots
cabbage
brussel sprouts
onions
tomatoes
broccoli
apple cider vinegar

and I eat that all day every day for months and months at a time and I am easily at my strongest and healthiest during this time

I grow a lot of my own vegetables but depending on location and type of store you shop at you could handle it for 50-100 a week

If you're a vegan for the long term look into into a b12 supplement

If you eat enough calories you will hit necessary protein

Dunno about the States but I get along pretty cheap, meat's expensive y'know.
Buying lentils/legumes in bulk helps a tonne and using whichever veggies are currently in season lowers the cost quite a bit. Curries, dhals and soups are cheap as fudge after the initial investment in some spices (they last a long time).
Usually I cook for a shitload of food at once and eat it as long as it lasts.

Last week I made borscht. 1e/kilo for cabbage, half a euro for half a kilo of potatoes, one euro for 1kg of beetroots and a euro for some 800g kidney beans. The onions and the garlic were xx cents. Added in some bay leaves, salt and black pepper.
Ate it with rye bread which was like 30 cents per package. If you can be arsed to do it baking your own bread makes things even cheaper.

that makes for something along the lines of five to six euros for the week's dinners.

Yh this, doubly so if you drink shitloads.
Might also want to consider something for the iron as it's not as readily bioavailable from a vegetarian/vegan diet.
