You can do anything you want but you should not be held responsible for the theft of this bike.

But what would be the ethical thing to do?

Why do people need to assign blame and come up with fault? Its a narrow binary lens, a simpleton's way of viewing the world. Who is at fault for prostitution? The johns who patronize them? The women who solicit men? The police for failing to crack down on them? Society for failing to provide adequate welfare to obsolete it as a profession? Society for making it stigmatized in the first place? Who is truly being exploited?

If I buy a bicycle from someone, and I find out later that they actually stole the bicycle from someone else I know, what do you think I should do?

That's what background checks are for. If you know someone is exploited then you have the option to not buy from them. When people don't buy your product then you go out business real quick.
The only reason these corporations are able to exploit the workers is because the government allows for it and the workers don't have better alternatives because their country is a shithole that doesn't care about work conditions/minimum wage etc.

Since there is a gap in the market to provide better pay/work conditions why don't you step up and be a leading example?

I think most all of us are apathetic about the exploitation that is both around us, and that we contribute to.

Apathetic yes but when it comes to spending money most people don't give a shit. They see a price tag made in China and one made in US they usually forget about all that stuff real quick.

That is not important. The important thing is that you don't have to give up your bike. You paid for it, and you got it fair and square. You didn't break any laws in obtaining your bike and you didn't steal anybody. The guy who did the stealing should pay restitution to the guy he stole the bike from. Or you can voluntarily give the bike back to the rightful owner, but then the thief guy would have to compensate you. But it doesn't matter which course of action you take, you are not required to invite the bike-owner into your home, and then have to feed and clothe him, just becuase you profitted from the theft of his bike.

Do you think you should invite the bike-owner into your home just because you profitted from the theft of his bike?

I don't think that any one specific thing should be done, but that simply 'something' should be.
