The problem here is the burning looting criminals, not Rittenhouse.

So it'd be 100% okay for someone to just open fire on the 1/6 mob? They'd be acting in self defense and anyone trying to stop them would just be threatening the shooter and strengthening their self defense claim.

Matter of fact Rittenhouse was extremely professional and cool. He didn't even empty the mag.
Imagine you running away from a mob that tries to hurt or kill you. That mag would probably have been empty in matter of seconds
