You don't need to be top 1% to know how to recognize a man/woman from cues.
and if you aren't looking at them from the front? Or just can't tell because they've got a fat neck, or they're wearing something that obscures it like a scarf? Or how about everybody just tells you they're intersex. How would you tell who's lieing?
It's far easier and requires less assumptions and hoop-jumping to just refer to the small minority of people as what they want to be referred to. It's not like our gendered words have always been the same, or that other cultures haven't recognized LGBTQ people.
