That business is still privately owned property. The business owner is not funded by the government. If a business owner wants to install coed bathrooms? I say more power to them. If they want genderless bathrooms? Great! If they want Gendered bathrooms? Super! Each of those choices can have an impact. If females don't want to shit next to males, they may not cater to the genderless or coed business. If males don't want to shit next to women, likewise. On the other hand, if the people really don't give a shit (heh), or actively want to shit next to the opposite gender, then perhaps the business owner who goes full coed shitter gets a rise in business.
The idea that the business owner invests in and builds up the business, but somehow the government should magically be dictating what the business can or can't allow is literally fascist. Unless you can provide one iota of proof that personal health is negatively impacted due to using "born gender" or whatever you want to call it restrooms, you have no leg to stand on by comparing who uses what bathroom to food-based health inspections.
