I'm not exactly sure what you're asking. Are you asking why the "very conservative" / "somewhat conservative" / "moderate" / "liberal" percentages in polls are different than how people self-identify in the exit poll when they show up to vote on Election Day? Or the same question but just about Democratic/Republican/Independent?
It can be caused by a whole lot of different things, both intentionally and unintentionally.
